Impossibly Easy Mexican Pie

Been making Impossible Pie forever and last time I tried it with a Mexican spin. Came out great.
Ingredients
- 1 lb. ground beef, lean shopping list
- 1 onion, chopped shopping list
- taco seasoning.....I use Best Ever taco seasoning Mix shopping list
- 1/2 cup water shopping list
- salt and pepper to taste shopping list
- 1 can diced tomatoes with green chilies, drained shopping list
- 1 1/2 cups Mexican blend cheese, shredded shopping list
- 1/2 cup Bisquick mix shopping list
- 1 cup milk shopping list
- 2 eggs shopping list
How to make it
- Preheat oven to 400
- Spray 9 inch glass pie plate with cooking spray
- In skillet over medium heat, cook beef, onion, salt and pepper until broken up and no longer pink
- Drain
- Put back in skillet and add taco seasoning and water
- Simmer for 4-5 minutes until water evaporates
- Pour into pie plate
- Sprinkle tomatoes on top
- Top with cheese
- In mixing bowl, combine Bisquick, milk and eggs
- Pour over cheese.
- Bake 25 minutes or so
