How to make it

  • In mixing bowl, add 1 1/4 cups water, 1/4 cup plus 2 tbls. corn starch and 2 tbls. soy sauce and whisk to combine
  • Add pork and marinate 20-30 minutes
  • In saucepan over medium high heat, add all sweet and sour sauce ingredients
  • Cook, stirring continuously, until sauce comes together and thickens (I didn't keep track of how long this took but it wasn't very long)
  • Add oil to large skillet over medium high heat
  • With slotted spoon remove pork from marinade and add to skillet
  • Stirring frequently, fry pork until golden brown
  • Remove from skillet
  • Add veggies and fry until tender crisp
  • Add pork, pineapple chunk and sauce; stir to combine
  • Heat until pork warms through
