How to make it

  • Pierce the casings of the Italian Sausage with a knife and remove. Crumble the sausage into a skillet and brown slightly until it starts to render some juice/fat. (no additional oil necessary)
  • Add the onions, carrots, and bell pepper(s) and continue sauteeing until the sausage is browned and the veggies are tender. Drain if necessary.
  • Pour in the wine/broth. Add parsley. Simmer on low heat while preparing pasta of your choice according to pkg directions. Drain pasta and keep warm, but reserve some of the pasta cooking liquid.
  • When pasta is almost cooked, mix flour, milk, and parmesan cheese in small bowl. Add to skillet with sausage and veggie mixture. Cook until thickened. Add salt & pepper to taste.
  • Mix in pasta, and add some of the pasta cooking liquid if necessary. Adjust seasonings. Sprinkle more parmesan cheese on top and serve.
  • If you will be reheating leftovers, you will probably have to add more liquid as the pasta absorbs more liquid the longer it sits.
