How to make it

  • Roast chicken until it falls off the bones and then shred chicken.
  • Combine cream cheese and taco seasoning, and mix with chicken.
  • Spray a 13 x 9 baking dish with "Pam" .
  • Cover the bottom of the pan with enchilada sauce.
  • Place 4 tortillas over sauce, top with chicken/cheese.
  • Layer 4 tortillas on top, spread with refried beans, pour more enchilada sauce over beans.
  • Layer 4 tortillas on top, pour remaining enchilada sauce over.
  • Cover with shredded cheese, olives and spoon salsa over top
  • Bake at 350 for an hour.
