Enchalasagne

- 1 chicken, roasted, cooled and taken off the bones shopping list
- 12 flour or whole grain tortillas shopping list
- 2 cans enchilada sauce shopping list
- 8 oz.. whipped cream cheese shopping list
- 1 Tbs taco seasoning shopping list
- 1 can refried beans shopping list
- 2 cups shredded mexican style cheese shopping list
- 1 small can sliced black olives shopping list
- 1 jar black bean and corn salsa shopping list
How to make it
- Roast chicken until it falls off the bones and then shred chicken.
- Combine cream cheese and taco seasoning, and mix with chicken.
- Spray a 13 x 9 baking dish with "Pam" .
- Cover the bottom of the pan with enchilada sauce.
- Place 4 tortillas over sauce, top with chicken/cheese.
- Layer 4 tortillas on top, spread with refried beans, pour more enchilada sauce over beans.
- Layer 4 tortillas on top, pour remaining enchilada sauce over.
- Cover with shredded cheese, olives and spoon salsa over top
- Bake at 350 for an hour.
