Pineapple Curry With Prawns

- 300 grams shelled white prawns shopping list
- 2 tbsp. Kaeng Khua chilli paste shopping list
- 3 cups coconut milk shopping list
- 2 cups coarsely chopped sour pineapple shopping list
- 2 kaffir lime leaves torn into pieces shopping list
- 2 tbsp. sugar shopping list
- 2 tbsp. tamarind or lime juice shopping list
- 2 tbsp. fish sauce shopping list
How to make it
- Skim 3 tbsp. of cream from the coconut milk, heat in a wok. When the oil surfaces, add the pounded chilli paste and stir-fry. When the fragant, put in the prawns and pineapple and coconut milk and stir.
- Season with the tamarind or lime juice, sugar and fish sauce, add the kaffir lime leaves, and when the curry is boiling once again, remove from the heat.

You got my High Five Berry for your Pineapple Curry With Prawns recipe. Unfortunately I have no resource for lime leaves. I will try zesting a lime to give that extra lime flavor.
