Lemon Thyme Roasted Potatoes

- 2 pound yukon gold potatoes, quartered (or other potatoes of your choice) shopping list
- 2 tablespoon olive oil shopping list
- sea salt & black pepper, freshly ground - to taste shopping list
- 2 tbsp fresh thyme leaves shopping list
- 1 tbsp lemon zest shopping list
How to make it
- Preheat oven to 425F.
- Place potatoes, oil, salt, pepper, thyme and lemon zest into a large mixing bowl and toss to coat.
- Pour potatoes into 13x9 glass casserole or similar cooking vessel. Make sure all the zest & thyme makes it into pan.
- Place in center rack of oven and bake for about 45 minutes, stirring about twice to ensure even cooking & browning.
