Ingredients

How to make it

  • In a large stock pot brown & cook turkey until almost done, drain any fat. Add olive oil, onion & garlic, saute for a few minutes. Season with a little salt & pepper (I always check after the broth & V-8 is added to check seasonings, you don't want to add too much salt)
  • Add the celery, carrots, potatoes, cabbage, chicken stock, V-8, thyme, bay leave & red pepper flakes if using, mix well. Add enough water to cover. Bring to a low boil, simmer aprox 30 minutes or until the vegetables are tender. Remove the bay leave. Top with Parmesan cheese and serve with crusty garlic bread!
