Marie's Cabbage Soup

- 1 lb ground turkey shopping list
- 3 tbsp (or more if needed) extra virgin olive oil shopping list
- 1 onion, chopped shopping list
- 2-3 cloves garlic, minced shopping list
- 3 stalks celery, sliced shopping list
- 2 carrots, sliced shopping list
- 3 potatoes, cubed (1 inch or so) shopping list
- 1 small head of cabbage, cored, chopped shopping list
- 2 14 oz cans low sodium chicken broth (homemade chicken or vegetable even better) shopping list
- 1 14.5 oz can diced tomatoes shopping list
- 2-3 cups vegetable juice (V-8) shopping list
- water shopping list
- 1/4 tsp thyme (I add just a pinch more) shopping list
- 1 bay leave shopping list
- red pepper flakes, just a pinch (optional) shopping list
- Shredded or grated Parmesan to top soup with shopping list
- salt & pepper to taste shopping list
How to make it
- In a large stock pot brown & cook turkey until almost done, drain any fat. Add olive oil, onion & garlic, saute for a few minutes. Season with a little salt & pepper (I always check after the broth & V-8 is added to check seasonings, you don't want to add too much salt)
- Add the celery, carrots, potatoes, cabbage, chicken stock, V-8, thyme, bay leave & red pepper flakes if using, mix well. Add enough water to cover. Bring to a low boil, simmer aprox 30 minutes or until the vegetables are tender. Remove the bay leave. Top with Parmesan cheese and serve with crusty garlic bread!
