Avocado Salsa

- 1.5 pounds of tomatillos shopping list
- 1 head of garlic(8-10 cloves) shopping list
- juice from 1 lime shopping list
- 1 slice of red onion shopping list
- 1 bunch of cilantro - leaves only shopping list
- 2 large jalapenos - seeded and deveined for a milder salsa shopping list
- 2 large avocados shopping list
How to make it
- 1. Peel and wash the tomatillos and place in a saucepan covered with water. Bring to a boil until tomatillos are soft, about 10 minutes
- 2. Peel garlic cloves
- 3. Remove stems from cilantro using only the leaves
- 4. Split JalapeƱos and remove seeds and veins for a milder salsa
- 5. When Tomatillos are softened, place into a blender, or food processor with a quarter cup of the boiling water from the saucepan, and add everything except the avocados. Blend for a few minutes until the salsa is smooth.
- 6.) Cut the avocados in half and remove the pit. Using a spoon, scoop the avocado out and place in the blender or food processor, and blend further until smooth.
- This recipe will make about 1 quart of avocado salsa.

I/ loved this stuff and it is HIGHLY addicting. I used it on tostadas, but Ithink I may use the rest as a veggie dip to snack on. Yum! More in the IMI group --------> more
