I had to play with this a couple of times but I got it cut down to a serving for one. I bought a 1.5 quart slow cooker especially for cooking oatmeal or steel cut oats overnight. Here is what I used:
5 slices of frozen peaches, 1 Tbs of brown sugar, 1/4 tsp of cinnamon, 1/2 cup of Quaker Old Fashioned Oats and a scant cup of water. I set the cooker to "Keep Warm' until I got up which was eight hours later. Then I switched it to "Low" for one hour and 15 minutes while I got ready for work. I added a picture of my results. I think next time I will stir it because my brown sugar was all in one place. Great overnight recipe for perfect oatmeal. I added a thread in IMI 2/16/13.
