A made-over "fake out" of one of my favourite Chinese food dishes. Vary the proteins and vegetables to suit your eating habits / needs.

Ingredients
  • 2 cups hot, cooked vermicelli pasta (rice or normal)
  • 3 oz skinless, boneless chicken breast, cut into strips
  • 2 oz pork tenderloin, cut into strips
  • 2 cloves crushed garlic
  • 1/8 onion, sliced
  • ½ large carrot, julienned
  • 1 tbsp water
  • 1 stalk celery, chopped finely
  • 12 medium shrimp (thawed if frozen)
  • ½ cup bean sprouts
  • 1 tsp low-sodium soy sauce
  • 1 tbsp curry powder

Directions
  1. Brown chicken & pork in a large, deep fry pan coated with non-stick cooking spray.
  2. Add the garlic, onion, carrots and water.
  3. Cover and steam 5 minutes
  4. Add celery and shrimp. Cover and steam 2 minutes.
  5. Add the bean sprouts, curry powder and soy sauce.
  6. Toss to blend and cook 5 minutes, stirring.
  7. Serve over hot noodles.
