Ingredients

How to make it

  • Toss apples with sugar and cinnamon and set aside
  • Combine eggs, oil and vanilla and juice
  • Combine flour, salt, sugar and baking powder
  • Beat both mixtures together ( batter will be thick)
  • Fold in nuts if using
  • Drain apples and stir if any liquid into batter, set apples aside
  • Grease and flour a bundt pan well or 2 loaf pans
  • Place in this order into pan or pans:
  • 1/3 batter
  • 1/2 of the apples evenly placed
  • 1/3 batter
  • 1/2 of apples
  • 1/3 of batter
  • Bake in a 375 oven 60-70 minutes or until tested done in center
  • Loaf pans will require less baking time
  • Cool 15 minutes in pan
  • Remove and let cool
  • Glaze as desired
  • Note: freezes well, taste better as it ages.
  • Refrigerate leftovers

    Sincere apologies to all because I forgot to include ( now corrected ) 1 1/2 cups sugar in the cake batter- thus makes all the difference in this recipe. It still will be a thick batter but it will be moist indeed!. Also the drained apple filling will generate a bit of liquid- not a lot, and apples can touch sides of pan when placing in pan, which I originally said to avoid because the cake could stick in the pan when removing. I usually use Pam for baking and nothing ever sticks to the pan.
    Maybe one day you may want to rebake this delicious cake.
    Ironically we took it out of the freezer last night for company and it was delish! It's worth a rebake in my opinion!
    And sorry Pointsevenout you baked the incorrect recipe!
