Ingredients

How to make it

  • Saute the onions and peppers and then garlic in some olive oil in a stock pot
  • Add the corn,pesto sauce, broth and seasonings and bring to a boil
  • Lower heat to a simmer and cover and cook until corn is tender.
  • Add cream as desired.
  • remove bay leaf
  • Hand blend if desired to partially puree some of the soup for added texture
  • Note: soup may be frozen and of course recipe may be halved
