Summer Corn Soup

- 10-12 ears of fresh raw corn- kernals cut off the cob shopping list
- 1 large onion chopped shopping list
- 4 red bell peppers chopped shopping list
- 1 large clove of garlic minced shopping list
- 1/2 cup of prepared or bottled pesto sauce or as desired shopping list
- 1 bay leaf shopping list
- 1 Tbs herbs De Provence shopping list
- 2 quarts water , vegetable or chicken broth shopping list
- salt and pepper to taste shopping list
- heavy cream to thin and lighten as desired shopping list
How to make it
- Saute the onions and peppers and then garlic in some olive oil in a stock pot
- Add the corn,pesto sauce, broth and seasonings and bring to a boil
- Lower heat to a simmer and cover and cook until corn is tender.
- Add cream as desired.
- remove bay leaf
- Hand blend if desired to partially puree some of the soup for added texture
- Note: soup may be frozen and of course recipe may be halved
