Summer Corn Soup

    Recipe by Midgelet: Summer Corn Soup/saved
    Very nice soup. Just happened to denude two dozen ears from the garden earlier in the week for freezing so I used half of the kernels for this soup. Threw in some garden potatoes too. Wish I could say the peppers were from the garden too but my plants died for some reason. Blended with an immersion blender at the end for more of a chowder look. Added a pint of heavy cream.
    Recipe makes substantially more than 10 servings. Glad it freezes well.
    Made it with Pesto from here at GR. Gives it an interesting flavor that's not substantially corn, and a green hue. Doubled the spec'ed amount on the pesto.
    And the peppers were green, sorry. Went with what I had.

    Bookmarked this recipe as soon as I saw it. I don't have a lot of experience making corn soups or chowders. Got fresh cobs from the Farmer's Market as well as fresh peppers and my own homemade pesto. I used chicken broth but I omitted the heavy cream and just added enough evaporated milk to get the right consistency. One forgets sometimes what a sweetness corn has to it and the broth is delicious flavoured. LOVED the addition of the peppers and the pesto. This was a lovely recipe and I will be sure to make it every corn season. Thanks Midge!

    Okay, this is probably in my top 3 favorite soups I've made! The pesto really puts this over the top, even though I did use jarred. I also used a part green/yellow bell pepper from the garden instead of the red, so no red specks in my soup. Cut this way back to probably about 3 servings (only had 3 ears of corn). Served with crackers! Added a pic :)
