Mascarpone Seafood Pasta

- 1lb medium shrimp, peeled and deveined shopping list
- 1lb cooked salmon fillets, flaked into chunks shopping list
- 1 red or sweet onion, diced shopping list
- 2 large tomatoes, diced shopping list
- 3 cloves garlic shopping list
- 1/4 cup white wine shopping list
- 2T fresh basil, minced shopping list
- 1 lemon, juiced shopping list
- 8oz mascarpone cheese shopping list
- 4oz parmesan cheese, grated shopping list
- several dashes hot sauce shopping list
- 1lb penne or similar pasta, cooked and drained shopping list
- kosher and sea salt and fresh ground pepper shopping list
How to make it
- In large pan, melt butter over medium heat.
- Add onion and cook about 5 minutes
- Add garlic and cook another 3 minutes
- Add tomatoes and wine and cook until liquid is reduced by 1/2
- Add shrimp and cook a few minutes until the just begin to curl and turn pink.
- Add basil, salt and pepper, lemon juice, mascarpone and shrimp and cook, stirring often, until well mixed.
- Add Parmesan and cooked pasta and stir to coat and combine.
- Serve hot.

Delicious! I used a mix of shrimp, salmon and sea scallops (adding the scallops a few minutes before the shrimp). One of the best seafood pasta dishes I have ever had. So easy, too! Love the way mascarpone melts in a sauce like this!
