Ingredients

How to make it

  • Preheat the oven to 180C/350F.
  • In a bowl, whisk together the oil, eggs, sugar and honey until well combined.
  • Stir in the flour, baking powder, bicarbonate of soda, salt, spices and grated carrots and beat well.
  • Pour the cake mixture into a greased 23cm/9in cake tin and transfer to the oven to bake for at least 30 min or until a skewer poked into the centre comes out clean.
  • Leave to cool on a wire rack and carefully remove from the tin when cool. See Photo

    MMMMMMM this sounds so nice! Honey, Cardamom, so many lovely flavours.

    I have just begun to bake again, after a gap of many years...
    For health reasons I can eat only a little bit of what I make, but Tom loves cake! And I am pretty sure you can freeze cake too!

    Yum! I love cakes that you don't have to fuss with icings and such. It would make a great treat anytime of the day for me.
    I will be making this when it gets a bit cooler in the fall. Thanks for sharing your lovely recipe:)
