Vidalia Marinated Smoked Chicken

- 5lbs bone in skin on chicken pieces(I used thighs) shopping list
- 2 large vidalia onions, grated(retain the juice) shopping list
- 1 cup red wine vinegar shopping list
- 6 cloves garlic, minced shopping list
- juice from 2 lemons shopping list
- 1/2 cup olive oil(I used chili oil infused and it was wonderful! :) shopping list
- fresh ground pepper and kosher or sea salt shopping list
How to make it
- Combine all ingredients in an extra large zipper bag and squish around to combine.
- Let rest in fridge for at least 4 hours, over night is better, turning a few times.
- Let rest outside of fridge about 30 minutes while preparing grill.
- Prepare wood chips to add to the grill. Try apple, cherry, etc. :)
- Grill over medium high heat until temp is 165 at the thickest part.

I baked it in the oven as it was raining outside and it was delicious! I can't wait until next Spring to try this when Vidalia's are in season again. All I can say is YUM! YUM! YUM!
