These are super terrific mashed potatoes! I had the last of my Yukon Gold crop to use up. Three of them weighed a bit over one pound. I used two pieces of bacon, two tablespoons of butter, a bit of lime juice (looked like a bit over a teaspoon), one chipotle in adobo and 1/2 cup of a shredded Mexican blend cheese. I didn't have sour cream so I used about 1/4 of a cup of milk. It may have been less or it may have been more. I didn't measure, I just splashed. I thought I had green onions but I didn't. Luckily, I remember my very own chives in my garden. Oh, and I mashed with my ol' potato masher. These were absolutely delicious. Thanks for posting this, Keni. I added a picture and showed all the IMI'ers. 10/5/13
