Creamy Tortellini Soup With Sausage, Tomatoes And Spinach

- 2T butter shopping list
- 1 small onion, diced shopping list
- 8 cloves garlic, minced shopping list
- 1lb Italian sausage, ground(I used hot) shopping list
- about 2 quarts chicken stock shopping list
- 1lb frozen or fresh tortellini of your choice shopping list
- 3 large tomatoes, diced(or sub 2 14oz cans, one drained, one not) shopping list
- 1lb fresh baby spinach, roughly torn shopping list
- Total of about 1/4 cup fresh Italian herbs, micned(basil, parsley, oregano, etc) shopping list
- 1 cup heavy cream, evaporated milk or Mexican crema shopping list
- fresh Parmesan, grated or shaved for serving shopping list
How to make it
- In large soup or stock pot, melt butter and saute onions for about 10 minutes.
- Add garlic and sausage and cook until sausage is just done.
- Add stock, tomatoes, Italian seasoning, salt and pepper and heat to boiling.
- Reduce heat and simmer for at least 20 minutes, stirring occasionally
- Add tortellini and cook until pasta is tender
- Add spinach and cream, reduce heat and stir a couple of times to wilt spinach, slightly.
- Add Parmesan at serving.

Made this for Keni Cooking Day and it was fantastic!!! I agree with Nadine about simmering longer, I made it to specs, but the flavor was much better the next day. Not a drop went to waste!!! Sure do miss you Keni...
