Ingredients

How to make it

  • In large soup or stock pot, melt butter and saute onions for about 10 minutes.
  • Add garlic and sausage and cook until sausage is just done.
  • Add stock, tomatoes, Italian seasoning, salt and pepper and heat to boiling.
  • Reduce heat and simmer for at least 20 minutes, stirring occasionally
  • Add tortellini and cook until pasta is tender
  • Add spinach and cream, reduce heat and stir a couple of times to wilt spinach, slightly.
  • Add Parmesan at serving.

    Absolutely perfect for a cool evening dinner. Made it with evaporated milk and dried Barilla tortellini. And, yes, the leftovers were terrific the next night! Think we could have this soup every week and never tire of it!

    Made this for Keni Cooking Day and it was fantastic!!! I agree with Nadine about simmering longer, I made it to specs, but the flavor was much better the next day. Not a drop went to waste!!! Sure do miss you Keni...

    Feb 1/16 This recipe is fantastic. Instead of 1 lb. of sausage meat I added 2 lbs. The other thing is I love to allow soups etc. to simmer so I prior to adding the cream I allowed everything to simmer for about 1 hour then added the cream simmer for sometime. I then only added a hand full of spinach this way we could add the spinach to ourselves. Will be making again. RIP Keni.
