Baked Fish Tacos With Lime Cilantro Slaw

- For the Slaw: shopping list
- 3 green onions, sliced thinly, including some of the greens shopping list
- 1/2 cup roughly chopped cilantro shopping list
- 1/4 cup mayonnaise (do not use Miracle Whip) shopping list
- 1/4 cup sour cream shopping list
- Talpatio hot sauce, to your heat preference (can omit this for a less spiced taste) shopping list
- grated rind of one small lime shopping list
- juice of one lime shopping list
- 1/2 teaspoon salt shopping list
- 2 cloves finely minced garlic shopping list
- 2 cups finely shredded cabbage shopping list
- 1/2 onion, finely diced shopping list
- Spice Rub for Fish: shopping list
- 1 teaspoon ground cumin shopping list
- 1 teaspoon ground coriander shopping list
- 1/2 teaspoon smoked paprika (brings out a wonderful, smokey flavor in the fish!) shopping list
- 1/2 teaspoon garlic salt shopping list
- 1/4 teaspoon red pepper flakes, crushed shopping list
- About 1 1/2 pounds firm fish, like tilapia, cod, halibut, red snapper, orange roughy,etc shopping list
- 8 to 12 corn tortillas, warmed, as directed on the package shopping list
- Optional toppings: jalapeno slices, Mexican cheese crumbles, pico de gallo, etc. shopping list
How to make it
- Prepare the slaw by mixing the wet ingredients together to your spice level, then stir it into the dry ingredients...mix to combine and chill until ready to use. (This kept very nicely overnight)
- Mix together the spice rub for the fish; use all of it to rub all over the surface of the fish, both sides. Allow fish fillets to set for about 15 minutes with the rub on it, then place the fillets on a baking sheet you have coated with cooking spray.
- Bake the fish at 425 degrees, until fish is done and flesh will flake easily.
- Removed the pan from the oven and cut the fish into bite-size pieces.
- Fill a warm corn tortilla shell with some of the fish, top with some of the slaw, and serve with any additional toppings you wish (we didn't add anything since it was so flavorful on its own).
