Ingredients
  • 6 each Apple, cored and diced
  • 1 1/8 cups Mayonnaise
  • 3 teaspoons Lemon Rind, grated
  • 1 1/2 tablespoons Lemon Juice
  • 1 1/2 cups Celery, diced small
  • 3/4 cup Pecan, Dry-roasted, chopped
  • 1 1/2 cups Raisin, Golden Raisins preferred
  • 1 1/2 cups Marshmallows, miniatures (Optional)

Directions
  1. Bring one cup of water to a boil in a medium saucepan. Remove from heat and stir in raisins or dried cranberries. Let stand for 10 minutes and drain.
  2. Roast or toast pecans in a skillet. Set aside to cool.
  3. Stir together all ingredients in a large salad bowl, cover and chill before serving.

This is almost like my Grandmother's Do you remember Ambrosia Salad?? She made that every single Easter. I have not been able to find that recipe among the many that she left me. Today I found three Red Velvet Cake Recipes and One Japanese Pie recipe!!


Hmmm... Pat's mom used to fix Ambrosia. Let me dig around a little and see if we still have it.


My mother made this when I was young but to tempt the picky eaters she would add some maraschino cherries and coconut. Almost Ambrosia-like.


Interesting note Teena. Ambrosia and Waldorf Salad are indeed kindred souls. Sweeties that are between a salad and a dessert. If you throw on the marshmallows mine is a dessert. Without them it is a salad. Introduced at the Waldorf Astoria Hotel decades ago. Of course I have no idea what the original recipe was. I'll have to research that... :]
