Waldorf Salad

- 6 each apple, cored, peeled and cut into 3/4 inch chunks shopping list
- 1 1/8 cups mayonnaise shopping list
- 3 teaspoons lemon rind, grated shopping list
- 1 1/2 tablespoons lemon juice shopping list
- 1 1/2 cups celery, diced small shopping list
- 3/4 cup pecan, roasted & chopped fine shopping list
- 1 1/2 cups seedless raisins shopping list
- 1 1/2 cups marshmallows, miniatures (Optional) shopping list
How to make it
- Bring one cup of water to a boil in a medium saucepan. Remove from heat and stir in raisins or dried cranberries. Let stand for 10 minutes and drain.
- Roast or toast pecans in a skillet. Set aside to cool.
- Stir together all ingredients in a large salad bowl, cover and chill before serving. See Photo

This is almost like my Grandmother's Do you remember Ambrosia Salad?? She made that every single Easter. I have not been able to find that recipe among the many that she left me. Today I found three Red Velvet Cake Recipes and One Japanese Pie recipe...more

My mother made this when I was young but to tempt the picky eaters she would add some maraschino cherries and coconut. Almost Ambrosia-like.
