Ingredients

How to make it

  • Preheat oven to 375F.
  • Dredge chicken in flour, shake off excess.
  • Place chicken in a casserole dish large enough for chicken plus a layer of peach slices, but do not add the peaches.
  • Heat orange juice and oil until very warm, pour over chicken.
  • Bake 30 minutes, basting twice.
  • Place peach slices around chicken and baste bird again.
  • Bake 20 minutes longer, basting two to three times over both chicken and peaches.
  • Serve over hot rice pilaf and steamed vegetables.

    I made this last night..hmm? Missing something. Mine was very bland. Maybe some spices on the chicken? I thought about thyme, cinnamon, ginger or even some rosemary. Those spice all combine and compliment the chicken and the peaches. I will try again and update you.

    This does sound good, and I tried it but wasn't overly enthused. That was likely due to me somehow or other. I had a very tart flavor result versus the sweetness I expected. This was only my first try, so we shall see.
