Lumberjack Cake Recipe
This cake is from my friends in Toronto, they couldn't explain the Lumberjack name, but it is what it is. Delicious.

Ingredients
  • 1 cup of peeled apples chopped
  • 1 cup of chopped dates
  • 1 tsp of baking soda
  • 1 cup of boiling water
  • 2 eggs well beaten
  • 1 cup of sugar
  • 1/2 cup of oil
  • 1 tsp of vanilla
  • 1/2 tsp of salt
  • 1 1/2 cups of flour
  • 1 1/2 tsp baking powder
  • Topping:
  • 3 tbsp of butter
  • 4 tbsp of milk
  • 1/2 cup of brown sugar
  • 1 cup of shredded coconut

Directions
  1. Mix the apples, dates, soda and boiling water. Mix well and let cool.
  2. Sift dry ingredients, reserve.
  3. Beat eggs with sugar, oil, vanilla until sugar is melted and not grainy.
  4. Mix all ingredients together, it will be quite runny.
  5. Pour into a prepped 13 x 9 x 2 pan and bake for 40 minutes.
  6. For the topping, cook the butter, milk, brown sugar and coconut for four minutes over low rolling boil.
  7. When cake is done, put the topping on and return to the oven to brown the topping slightly.
  8. Really nice served warm with a vanilla cream sauce.
  9. (how do you make vanilla cream sauce, you ask? Melt some good qualtiy ice cream and call it a sauce!)

Yum! Can't help you with the name origin (and I live right next to TO!) but sure sounds like they were some lucky lumberjacks!


Great recipe NotYourMomma! I am from Toronto but I have never heard of a "lumberjack" cake. Oh well, the name doesn't matter it's the taste that counts ;) You've got my 5 forks.
