Sauteed String Beans With Tomatoes And Olives Recipe

My mother always made these when i was growing up. The olives are optional and my own addition.

Ingredients
  • 1 pound string beans-either frozen french cut or fresh haricot verts
  • 1 medium tomato-chopped
  • 4 cloves garlic-chopped
  • 1 small onion chopped
  • 6-10 kalamata olives-pitted and roughly chopped
  • Fresh basil torn in pieces
  • 2 TBSP olive oil
  • salt to taste

Directions
  1. Heat oil in a saute pan.
  2. Add onions and saute until softened
  3. Add garlic and tomatoes, saute until tomatoes begin to melt.
  4. Stir in olives and add string beans.
  5. Mix well.
  6. Cover and let cook until beans are tender, stirring ocassionally.
  7. Add salt to taste if necessary.

no one mentioned it, but i forgot to say when to add the basil...


you can add the basil just when the tomatoes have melted and formed a bit of a sauce..
just before you add the green beans...

the basil also is not mandatory but it IS lovely...

I wanted to come back and thank you again for the recipe. I made this dish and it was really good! So thank you again for the recipe! I'm adding this one to my family's recipe file!


This was delicious. used the frozen string beans and i did not have olives so i used capers instead. i used dried basil and a lot more olive oil than the recipe amount (enough to coat the pan). I used 2 beefsteak tomatoes instead of one and the tomatoes with the dried basil & the onions & garlic made such a delicious sauce for the string beans. Thanks for a wonderful vegetarian dish!!!!
