Stuffed Portabello Mushrooms Recipe
Portabello mushrooms with balsamic vinegar and olive oil, stuffed with homemade spinach hummus.

Ingredients
  • 4 portabello mushrooms
  • 1 can chickpeas
  • 3 cloves garlic
  • salt and pepper
  • chili flakes
  • one cup frozen spinach
  • 1 tablespoon olive oil
  • balsamic vinegar
  • extra olive oil

Directions
  1. Scoop out the mushroom caps, set in metal baking dish
  2. Drizzle both sides of mushrooms with olive oil and balsamic vinegar
  3. Preheat oven to 350
  4. Drain chickpeas
  5. Combine in food processor: chickpeas, spinach, olive oil and spices
  6. Fill mushrooms with hummus
  7. Bake 10-12 minutes or until golden on top
