Texas Grilled Chicken With Lime Butter Recipe

Ingredients

3 3-1/2 pound bone-in chickens, separated by their parts

1 tablespoon ground cinnamon

1 tablespoon chili powder

1 tablespoon brown sugar

1 teaspoon cocoa powder

salt and pepper to taste

3 tablespoons olive oil

1 tablespoon balsamic vinegar

Lime Butter:

1/2 cup butter, melted

1 tablespoon fresh lime juice, not the stuff in that plastic lime

1 serrano chile, minced

2 tablespoons finely minced white onion

pinch of black pepper

Fresh chopped cilantro if desired

Directions

In a bowl, combine cinnamon, chili powder, brown sugar, cocoa powder, salt and pepper.

Add balsamic vinegar and olive oil and blend well.

With a spoon or basting brush, spread the seasoned paste over the chicken.

Grill the chicken, using medium heat on a gas grill or indirect heat for a charcoal grill.

Close the lid and grill until the chicken reaches 180° in the thighs and 170° in the breast, about 30 minutes.

In a small bowl, combine the butter, lime juice, serrano chilie, onion and black pepper.

Mix well.

Drizzle lime butter over the chicken just before serving or serve separately for dipping.
