How to make it

  • In a bowl, combine cinnamon, chili powder, brown sugar, cocoa powder, salt and pepper.
  • Add balsamic vinegar and olive oil and blend well.
  • With a spoon or basting brush, spread the seasoned paste over the chicken.
  • Grill the chicken, using medium heat on a gas grill or indirect heat for a charcoal grill.
  • Close the lid and grill until the chicken reaches 180° in the thighs and 170° in the breast, about 30 minutes.
  • In a small bowl, combine the butter, lime juice, serrano chilie, onion and black pepper.
  • Mix well.
  • Drizzle lime butter over the chicken just before serving or serve separately for dipping.

    This is true texas chili. The cocoa really brings out the flavor of the dish!!! I have added this and some other of your great recipes to my "calling all texas and....." group
