Texas Grilled Chicken With Lime Butter

- 3 3-1/2 pound bone-in chickens, separated by their parts shopping list
- 1 tablespoon ground cinnamon shopping list
- 1 tablespoon chili powder shopping list
- 1 tablespoon brown sugar shopping list
- 1 teaspoon cocoa powder shopping list
- salt and pepper to taste shopping list
- 3 tablespoons olive oil shopping list
- 1 tablespoon balsamic vinegar shopping list
- lime Butter: shopping list
- 1/2 cup butter, melted shopping list
- 1 tablespoon fresh lime juice, not the stuff in that plastic lime shopping list
- 1 serrano chile, minced shopping list
- 2 tablespoons finely minced white onion shopping list
- pinch of black pepper shopping list
- Fresh chopped cilantro if desired shopping list
How to make it
- In a bowl, combine cinnamon, chili powder, brown sugar, cocoa powder, salt and pepper.
- Add balsamic vinegar and olive oil and blend well.
- With a spoon or basting brush, spread the seasoned paste over the chicken.
- Grill the chicken, using medium heat on a gas grill or indirect heat for a charcoal grill.
- Close the lid and grill until the chicken reaches 180° in the thighs and 170° in the breast, about 30 minutes.
- In a small bowl, combine the butter, lime juice, serrano chilie, onion and black pepper.
- Mix well.
- Drizzle lime butter over the chicken just before serving or serve separately for dipping.
