How to make it

  • Lightly saute zucchini in oil just until crisp and tender, remove from pan
  • Mix sausage ingredients (onion thru turkey) and mix well, saute in pan and brown, set aside and cool
  • Add bread crumbs to cooled turkey mixture
  • To make cheese sauce:
  • Blend cornstarch and cold milk together and stir into hot milk
  • Stir constantly until thickened about 2 minutes (DO NOT BOIL)
  • Blend in the cheeses
  • Add beaten eggs to cooled turkey mixture
  • Layer cheese sauce, zucchini mixture and turkey mixture in a baking dish in 2 layers (start with cheese sauce and end with cheese sauce)
  • Cover and bake
  • 350 for 30 minutes or till bubbly
  • Can make ahead and freeze till ready to bake

    sorry...i know the picture is dark...i just couldn't get the right lighting. Anyway...very good recipe...left out the fennel, (don't care to much for it) and added a little red pepper flakes for a kick. Yum...we love it!
