Ingredients

How to make it

  • Bake potatoes at 425° for 45 minutes, or until tender.
  • Cool.
  • In a bowl, combine corned beef, sauerkraut, swiss cheese, scallions, garlic and horseradish.
  • Cut potatoes in half lengthwise. Carefull scoop out potatoes, leaving just the skins of the potatoes in tact.
  • In a bowl, mash potatoes with cream cheese.
  • Stir in the corned beef mixture.
  • Mound potato mixture into the skins of the potatoes.
  • Sprinkle with parmesan cheese and paprika.
  • Return to the oven for 30 minutes more, or until heated all the way through.
