Ruben Stuffed Baked Potatoes

- 4 large baking potatoes shopping list
- 2 cups corned beef, finely diced shopping list
- 1 bag sauerkraut, rinsed and drained shopping list
- 1/2-1 cup shredded swiss cheese shopping list
- 3 tablespoons scallions, diced shopping list
- 1 tablespoon horseradish shopping list
- 1 clove garlic, minced shopping list
- 1 package cream cheese, softened shopping list
- 3 tablespoons parmesan cheese shopping list
- paprika shopping list
How to make it
- Bake potatoes at 425° for 45 minutes, or until tender.
- Cool.
- In a bowl, combine corned beef, sauerkraut, swiss cheese, scallions, garlic and horseradish.
- Cut potatoes in half lengthwise. Carefull scoop out potatoes, leaving just the skins of the potatoes in tact.
- In a bowl, mash potatoes with cream cheese.
- Stir in the corned beef mixture.
- Mound potato mixture into the skins of the potatoes.
- Sprinkle with parmesan cheese and paprika.
- Return to the oven for 30 minutes more, or until heated all the way through.

I haven't tried anything such as these. They sound so great. They've got all the yummy stuff, they have to be the lushest things about. Thankyou for sharing this recipe. I can't wait.
