Jalapeno Sweet Potato Soup Recipe
This is wonderful! I am so glad that I discovered this one, because everyone loves when I make it. It is a favorite! Goes perfectly with a loaf of crusty garlic bread! Delish!

Ingredients
  • 4 slices bacon, finely chopped
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 3 cloves garlic, sliced
  • 4 pounds sweet potatoes, peeled and cubed
  • 8 cups chicken broth
  • 2 tablespoons pickled jalapenos, chopped
  • 2 tablespoons jalapeno juice
  • 1 teaspoon comino
  • 1/4 teaspoon baking soda
  • 1/2 cup cilantro leaves
  • 1-1/2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. In large pot, saute bacon and onion in butter until just tender. Add garlic and cook about 2 minutes.
  2. Add sweet potatoes, chicken broth, pickled jalapenos, jalapeno juice and comino. Cover and cook until potatoes are tender, about 20-30 minutes.
  3. When done, add soda, cilantro and milk. Coarsely mash potatoes with a potato masher.
  4. Stir well and taste for salt and pepper. Simmer for 15 minutes, stirring frequently.
  5. May add more chopped jalapenos
  6. May garnish with sour cream or coursely chopped toasted pecans.

What is comino?


Comino/cumin is a spice, and especially used in Southwest cooking. I use it often in rice dishes, chili, rubs for pork loin, etc. It comes in seeds or already ground, and I use both.


This sounds really good, I love soup, will give this a try as soon as this Savannah weather cools off a bit.
