I think this drink is from Mexico, but it's very popular around Latin and South America, most in the coasts...

Ingredients
  • 10 egg yolk
  • 4 cups milk
  • 3/4 cup sugar
  • 1 thick cinnamon
  • 4 tablespoons almonds, blanched and ground
  • 1 cup Brandy or Rum
  • 2 tablespoon Vanilla extract (optional)

Directions
  1. Beat yolks until thick and lemon - colored and set aside.
  2. Combine the milk, sugar and cinnamon in the top of a double boiler and bring to the boiling point, stirring frequently.
  3. Reduce heat and cook other 10 minutes, stirring all the while.
  4. Remove from heat and stir gently until mixture is lukewarm. ( if a coating forms on the milk because you haven't been too vigilant abaut stirring, strain through cheesecloth).
  5. Add beaten yolks, vanilla (optional) and almonds. Cook once more over hot water in a double boiler and cool again, stirring often.
  6. When liquid is cool, add the brandy or rum.
  7. Remove the cinnamon stick.
  8. You can ppour it into a bottle....
  9. Keep in refrigerator for about 24 hours at least before serving

Rompope is from Mexico. This recipe sound great!


I had in Mexico Rompope Icecream to die for! Thank you for the recipe. This gave me the idea to try and turn it into icecream if I add lots of whipped cream to it. I'll let you know how it turns - hopefully at least half as good as the one I had in Mexico City (DF). I tried to reproduce it when I got home, now I know that I have missed adding the almonds!
