Ingredients
  • 4 cups cubed red baking apples, I didn't peel them, but you can
  • 1/3 cup corn flake crumbs
  • 1/4 cup firmly packed brown sugar
  • 1/4 chopped dry roasted peanuts
  • 3 tablespoons all-purpose baking flour
  • 2 tablespoons butter, melted
  • Caramel ice cream topping
  • fresh lemon juice, I used about 2 tablespoons

Directions
  1. Heat the oven to 400°.
  2. Spray a square baking dish, about 1-1/2 quart, with non-stick cooking spray.
  3. In a bowl, combine corn flake crumbs, bown sugar, peanuts and flour.
  4. Mix well.
  5. Stir in butter and mix well again.
  6. In a large bow, combine the apples, caramel topping and lemon juice.
  7. Mix well.
  8. Spoon into baking dish and sprinkle with crumb mixture.
  9. Bake at 400° for 20-25 minutes or until apples are tender and mixture is bubbly.
  10. Cool slightly before serving.
  11. The apple layer will be "saucey".
  12. Serve with whipped cream or ice cream if desired.
