Tried And True Estate Sale Purchased Hazelnut Ice Cream Recipe
This is a recipe I obtained from an estate sale several years ago. Because of my love of hazelnuts, I made this one right away and it is now a regular in my home. We love it and hope you do too.

Ingredients
  • 1/2 cup half and half
  • 1-1/2 cups milk
  • 1 cup sugar
  • 1/2 cup pasteurized egg substitute
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons hazelnut extract
  • 1/4 teaspoons xanthan gum
  • 1/4 cup chopped hazelnuts

Directions
  1. Combine half and half, milk, sugar, egg substitute, flavor extracts and xanthan gum in a blender then cover and puree 3 minutes.
  2. Pour into freezer of your ice cream maker and stir in the hazelnuts.
  3. Freeze according to the manufacturer's instructions.
  4. Let stand 5 minutes at room temperature or until it can be sliced easily.

Where would I purchase xanthan gum and what is it? The recipe sounds fabulous. :D


Hi Shandy. It is a thickening agent and I found it at Whole Foods in the spice section.


I have found THE BEST ice cream recipes on this site all summer long, and you have come up with yet another one I need to print...now, if only I would remember to go buy an ice cream maker some time, that would probably help!


I'm with krumkake, I have the will, the recipes, and the ingredients just no maker. Befriending local chefs helps, sometimes they let you use theirs.
This looks great, I might try and find a workaround to the maker issue.


There is a hazelnut extract? I have a fondness of that flavor too.
