Cherry Pudding Cake Recipe
I always rely on this easy recipe when I need something at the last minute! My kids all love cherries so my freezer is always full of them and this is a great way to use them up!

Ingredients
  • 1/4 c butter or shortening
  • 1/2 c + 4 tbsp sugar (divided)
  • 1/2 c milk
  • vanilla to taste
  • 1 c flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3 c frozen, thawed sour cherries

Directions
  1. Drain cherries reserving 1-2 cups juice
  2. Place drained cherries in a greased 2 qt baking dish
  3. In a bowl, cream butter and 1/2 c sugar. Add 1/2 c milk and vanilla, stirring well to combine (will look curdly - is that a word?)
  4. In another bowl combine the dry ingredients then mix into to wet.
  5. Spoon and spread over cherries, covering as much as you can.
  6. Pour reserved cherry juice over top of all, then sprinkle with remaining sugar.
  7. Bake 40 - 50 minutes at 350.
  8. The cake will rise to the top and the juice and cherries form a nice saucy pudding underneath.
  9. Serve warm with ice cream or whipped cream.
