Rock Cakes Recipe
This is another Aussie basic. They are a great afternoon treat and aren't too sweet. Dads and Grandads in Australia love these! For a change substitute sultanas for craisins and mixed peel.

Ingredients
  • 2 cups self raising flour
  • 1/4 tspn allspice
  • 80 g unsalted butter
  • 1/3 cup caster sugar
  • 1/3 cup sultanas
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 1 tspn vanilla extract

Directions
  1. 1. Preheat oven to 190 C (375 F)
  2. 2. Sift flour and allspice together in a bowl and rub in butter with fingertips until butter resembles breadcrumbs.
  3. 3. Add sugar and sultanas and stir until combined.
  4. 4. Add the milk, egg and vanilla and stir to combine.
  5. 5. Place approx 2 tbspns of mix onto prepared baking trays allowing room for cakes to spread.
  6. 6. Bake for 10 minutes or until golden, allow to cool on the trays.
