Upside Down Cake In Iron Skillet

- 1 cup brown sugar shopping list
- 1 stick unsalted butter shopping list
- 1 small can crushed pineapple, undrained shopping list
- 2 eggs beaten shopping list
- 1 cup granulated sugar shopping list
- 1 cup flour shopping list
- 1 teaspoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup hot water shopping list
How to make it
- Mix butter, brown sugar and undrained pineapple in a 9 inch iron skillet on top of stove
- Heat until butter is melted
- Stir around
- Remove skillet to side until cake is mixed
- In bowl, whisk eggs until blended well
- Add sugar, flour, baking powder, salt, to eggs, whisk
- Add hot water, whisk until blended
- Pour this mixture over pineapple mixture in iron skillet
- DON'T WORRY about the pineapple layer coming up the sides when you pour the cake mixture on top
- Bake in a 375 degree oven for 30 minutes
- Let cool a few minutes,.... then
- YOU GUESSED IT! turn cake * upside down * onto serving plate.
- Let cool a few more minutes, so that it will be real gooey!
- Your mouth will water, but please be patient and wait :)
- Meanwhile you may want to scrape what did not come out of pan, and you can either eat it, or spoon is on the cake! :)
- NOTE: I have added pineapple rings, and a +little+ of the pineapple juice, rather than, crushed pineapple, undrained. I have also added whole maraschino cherries in the hole of the arranged pineapple slices.....makes a pretty cake. May add pecans also.
