Upside Down Cake In Iron Skillet Recipe
SO EASY, SO DELICIOUS, Made in an iron skillet in the oven, it is brown sugary, buttery, pineappely,...gooey,....OH THIS IS GOOD. A stand-by in our family. Been making it a long time!! OLD RECIPE

Ingredients
  • 1 cup brown sugar
  • 1 stick unsalted butter
  • 1 small can crushed pineapple, undrained
  • 2 eggs beaten
  • 1 cup granulated sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup hot water

Directions
  1. Mix butter, brown sugar and undrained pineapple in a 9 inch iron skillet on top of stove
  2. Heat until butter is melted
  3. Stir around
  4. Remove skillet to side until cake is mixed
  5. In bowl, whisk eggs until blended well
  6. Add sugar, flour, baking powder, salt, to eggs, whisk
  7. Add hot water, whisk until blended
  8. Pour this mixture over pineapple mixture in iron skillet
  9. DON'T WORRY about the pineapple layer coming up the sides when you pour the cake mixture on top
  10. Bake in a 375 degree oven for 30 minutes
  11. Let cool a few minutes,.... then
  12. YOU GUESSED IT! turn cake * upside down * onto serving plate.
  13. Let cool a few more minutes, so that it will be real gooey!
  14. Your mouth will water, but please be patient and wait :)
  15. Meanwhile you may want to scrape what did not come out of pan, and you can either eat it, or spoon is on the cake! :)
  16. NOTE: I have added pineapple rings, and a +little+ of the pineapple juice, rather than, crushed pineapple, undrained. I have also added whole maraschino cherries in the hole of the arranged pineapple slices.....makes a pretty cake. May add pecans also.

How funny I was going to make my pineapple upside down cake with the other things on the menu for my grandsons!!!I always use cast iron.It is my fav to cook in.It also give extra iron to anything made in it.Thank you so much.I love trying all the new recipes and this is being cooked today in my marathon cook for the weekend.

When I make pineapple upside down cake, I use the drained pineapple juice in my cake in place of the water (or milk) in the cake recipe.
