How to make it

  • In large saucepan, melt 1/4 cup butter.
  • Add shallot or green onion and saute 5 minutes.
  • Stir in shrimp, crab and scallops.
  • Season to taste with salt and pepper.
  • Add 1 tablespoon white wine and cook, stirring, over high heat 1 to 2 minutes.
  • Remove from heat.
  • In bowl, whisk together cornstarch, heavy cream and tomato paste.
  • Add to seafood mixture with remaining 2 tablespoons wine.
  • Return to heat and cook, stirring, 4 to 5 minutes or until thickened.
  • Add lemon juice and adjust seasonings with additional salt and pepper if needed.
  • Spoon into shallow baking dish or 8 individual shell shaped dishes.
  • Combine Parmesan cheese, cracker crumbs and melted butter.
  • Sprinkle over.
  • Place on baking sheet and bake at 400 degrees for 15 minutes or until bubbly and top is lightly browned.
