My Shellfish Appetizer

- 1/4 cup butter shopping list
- 1/4 cup shallot or green onion, minced shopping list
- 1 pound medium cooked shrimp, peeled, deveined and cut in half lengthwise shopping list
- 8 ounces crabmeat shopping list
- 8 ounces bay scallops, rinsed and patted dry shopping list
- salt and ground black pepper to taste shopping list
- 3 tablespoons dry white wine, divided shopping list
- 2 tablespoons cornstarch shopping list
- 2 cups heavy cream shopping list
- 1 tablespoon tomato paste shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1/3 cup Parmsan cheese, shredded shopping list
- 1/3 cup butter-flavored cracker crumbs shopping list
- 2 tablespoons butter, melted shopping list
How to make it
- In large saucepan, melt 1/4 cup butter.
- Add shallot or green onion and saute 5 minutes.
- Stir in shrimp, crab and scallops.
- Season to taste with salt and pepper.
- Add 1 tablespoon white wine and cook, stirring, over high heat 1 to 2 minutes.
- Remove from heat.
- In bowl, whisk together cornstarch, heavy cream and tomato paste.
- Add to seafood mixture with remaining 2 tablespoons wine.
- Return to heat and cook, stirring, 4 to 5 minutes or until thickened.
- Add lemon juice and adjust seasonings with additional salt and pepper if needed.
- Spoon into shallow baking dish or 8 individual shell shaped dishes.
- Combine Parmesan cheese, cracker crumbs and melted butter.
- Sprinkle over.
- Place on baking sheet and bake at 400 degrees for 15 minutes or until bubbly and top is lightly browned.
