Ingredients

How to make it

  • Butter a loaf pan and set aside.
  • Combine the flour baking powder and salt and stir to blend.
  • Using a whisk, slowly whisk in the eggs.
  • Whisk in the milk, cheese, olives and oil.
  • Set aside for 2 hours.
  • Preheat oven to 425°F.
  • Stir the batter to blend and pour into the prepared loaf pan.
  • Place in the center of the oven and bake 30 minutes or until firm and golden.
  • Allow to cool to room temperature.
  • To serve:
  • Slice the cake, then cut the slices into cubes. Arrange on a serving tray and serve with a nice Côtes du Rhône and with cheese or with Shallot, Yogurt & Parsley Dip.

    This is delicious, just delicious. I used a mix of green and olive-cured black olives. Final result was closer to a dense omelet or terrine than ‘cake.’ Very good, nonetheless. I plan to make it next with a mix of olives and sun-dried tomatoes. And of course DO NOT omit the dip, which is fabulous.

    I made this, it was really great! The texture reminds me of clafouti, dough was realy runny. My olives floated on the top of cake. I think tbsp measured flour is the reason, more flour would probably produce more thicnkess. But I really enjoyed it just the way it turned out. My sauce contained some rocket salad which suits perfect with eggy taste. Thanks for the recipe!

    Noir, I forgot to tell you that I made this last week and it was excellent. I made it for my Dad and he could not stop eating it. I had to slap his hand away so that other people could have a taste as well. Lol Thanks so much for a SUPERB olive cake!
