Baked Chicken Reuben Recipe
This rich, savory dish will fill your kitchen with a wonderful, pungent aroma.

Ingredients
  • 4 chicken breasts
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can(16 ounces) sauerkraut, drained
  • 4 (about 4x6 inches) Swiss cheese, sliced
  • 1-1/4 cups thousand island salad dressing
  • 1 tablespoon parsley, chopped

Directions
  1. Place chicken in greased pan. Sprinkle with salt and pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over cheese. Cover with foil and bake at 325 degrees for about 1 1/2 hours or until fork can be inserted in chicken with ease. Sprinkle with chopped parsley and serve.

The owner/chef of a little restuarant in the small town I grew up in used to serve his ruebens piled high with corned beef on one side and a big slab of chicken breast meat on the other side - boy, were those every tasty! Your recipe reminded me of that fantastic sandwich we used to order, in the wee hours of the morning after a night on the town...good stuff. I will have to try this recipe (I'll maybe have to add a layer of corned beef just to bring back the flavor of the memory!)


I've never tried a reuben with chicken....guess I know what I will be trying soon. :o) thanks Griz.
