Ingredients
  • 3 tablespoons extra virgin olive oil
  • 6 pounds uncooked stew meat
  • 2 pounds pork breakfast sausage with sage
  • 2 large white onions chopped fine
  • 14 ounce can beef stock
  • 2-1/2 ounces canned chipotle peppers in adobe sauce chopped fine
  • 2 squares bittersweet chocolate
  • 14 ounces canned salsa verde
  • 24 ounces bottled dark beer
  • 1 ounce top shelf tequila
  • 2 limes juiced
  • 1 teaspoon salt
  • 6 tablespoons freshly ground black pepper
  • 3 tablespoons liquid smoke
  • 6 tablespoons chili powder
  • 6 tablespoons ground cumin
  • 1 bunch green onions sliced
  • 2 cups 4 blend cheese

Directions
  1. Heat olive oil in large cast iron pot on high heat.
  2. Add beef and cook until browned stirring occasionally.
  3. When browned remove from pot and set aside then drain well.
  4. Brown sausage and chopped onions until sausage is browned then drain well.
  5. Return beef to pot along with remaining ingredients then stir well.
  6. Cover and simmer on medium heat for 4 hours stirring occasionally.
  7. Serve in bowls with cheese and green onions as garnish.

Why is it called Chipotle (Blue) Chili?


Excellent Chili, we really loved the flavor of this. I must ask though, what size is a "small" can of the chipotle chili's? We halved the recipe (it really makes a lot even then) and this was "nuclear" spicy. I think I like spicy foods and this was too much for me. The cans I found were 7 ounces. I heard you can tone them down a little by stripping out the seeds before putting them in. We ended up trying to cut the spice by adding 1/2 can of tomato sauce and the juice of another lime. We also added 2 cans of black beans to the halved recipe. I am going to strain off a little of the liquid and put this in a tortilla with rice for a super yummy and spicy burrito for lunch tomorrow! Great Recipe!

Ask your butcher for tri-tip beef when you make this. It's VERY lean and flavorful.

Im not sure if this is a mistake or joke. i think they meant 6 teaspoons black pepper. and it tomatoes and beans. i made it twice once original recipe: way too overpowering with black pepper and too meaty. second time: used 3 tblspoons black pepper, tomatoes, and kidney beans. oh and some coffee grinds and it was spectacular so be careful with this one.
