Swiss,guyère and white wine with garlic. Melted oooey goooey goodness. Use as dip with bread or over top steamed vegetables, potatoes or pasta.

Ingredients
  • 1 pound Swiss cheese, grated
  • 3/4 pound Guyère cheese, grated
  • 3 tablespoons all-purpose flour
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground white pepper
  • 1-1/4 cups dry white wine
  • 3 large cloves of garlic, minced
  • 1 pound crusty french bread loaf, cut into 1-1/2-inch cubes

Directions
  1. In a bowl, combine cheeses, flour, nutmeg and white pepper.
  2. Toss well.
  3. In a heavy saucepan over low heat, bring 1 cup white wine and garlic to a simmer.
  4. Add the cheese mixture by handfuls, whisking until melted and smooth.
  5. Mix in remaining wine by tablespoons to reach desired consistency.
  6. Serve in a fondue pot over heat with bread for dipping OR use as a
  7. topping for vegetables, pasta or potatoes.

Oh, I love fondue. My favorite place to eat is the Melting Pot but it is very very expensive. Do you have to have the wine? Can I use something else instead?
