Warm Garlic Cheese

Swiss,guyère and white wine with garlic. Melted oooey goooey goodness. Use as dip with bread or over top steamed vegetables, potatoes or pasta.

In a bowl, combine cheeses, flour, nutmeg and white pepper.
Toss well.
In a heavy saucepan over low heat, bring 1 cup white wine and garlic to a simmer.
Add the cheese mixture by handfuls, whisking until melted and smooth.
Mix in remaining wine by tablespoons to reach desired consistency.
Serve in a fondue pot over heat with bread for dipping OR use as a
topping for vegetables, pasta or potatoes.

Oh, I love fondue. My favorite place to eat is the Melting Pot but it is very very expensive. Do you have to have the wine? Can I use something else instead?
