Crisp-Crusted Catfish

- 2T light ranch dressing shopping list
- 2 large egg whites shopping list
- 6T yellow corn meal shopping list
- 1/4c parmesan cheese, fresh grated, about 1 ounce shopping list
- 2T all-purpose flour shopping list
- 1/4t ground red pepper shopping list
- 1/8t salt shopping list
- 4 (6oz) farm-raised catfish fillets shopping list
- cooking spray shopping list
- 4 lemon wedges shopping list
How to make it
- Preheat oven to 425*.
- Combine dressing and egg whites in a small bowl, and stir well with a whisk. Combine cornmeal, cheese, flour, pepper, and salt in a shallow dish. Dip fillets in egg white mixture; dredge in corn meal mixture.
- Place fillets on a baking sheet coated with cooking spray; bake at 425* for 12 minutes on each side or until lightly browned and fish flakes easily when tested with a fork. Serve with lemon wedges.
- Serving size: 1 fillet; 313 calories; 26% from fat.
