Crisp-Crusted Catfish Recipe
Hands down, this is the best darned catfish we have ever eaten. Taken from Cooking Light 2002.

Ingredients
  • 2T light ranch dressing
  • 2 large egg whites
  • 6T yellow corn meal
  • 1/4c parmesan cheese, fresh grated, about 1 ounce
  • 2T all-purpose flour
  • 1/4t ground red pepper
  • 1/8t salt
  • 4 (6oz) farm-raised catfish fillets
  • cooking spray
  • 4 lemon wedges

Directions
  1. Preheat oven to 425*.
  2. Combine dressing and egg whites in a small bowl, and stir well with a whisk. Combine cornmeal, cheese, flour, pepper, and salt in a shallow dish. Dip fillets in egg white mixture; dredge in corn meal mixture.
  3. Place fillets on a baking sheet coated with cooking spray; bake at 425* for 12 minutes on each side or until lightly browned and fish flakes easily when tested with a fork. Serve with lemon wedges.
  4. Serving size: 1 fillet; 313 calories; 26% from fat.
