Angel Hair Pasta With Clams Recipe
You may be supprised what you can create with canned clams. Go for simple sides: steamed broccoli and French bread. Taken from Cooking Light 1999, 5-ingredient, 15-minute book.

Ingredients
  • 8oz angel hair pasta, uncooked
  • 1t olive oil
  • 1 1/2t garlic, minced
  • 3 (6 1/2oz) cans minced clams
  • 2T fresh parmesan cheese, shredded
  • freshly ground pepper

Directions
  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, heat oil in a large nonstick skillet over medium heat. Add garlic; saute 2 minutes. Drain clams; reserving liquid. Add clam liquid to skillet, and simmer 5 minutes. Add clams; simmer an additional 5 minutes.
  3. Combine drained pasta and clam mixture in a serving bowl; toss gently. Sprinkle with cheese and pepper. Serve immediately.
  4. 310 calories, 11% from fat.

I had this over the weekend... It is awesome... I added a nice amount of fresh chopped parsley to dress it up! Very very good..


This is a good start. If you want to be a little more daring use fresh clams or muscles. Steam them in a pot and use that broth.

Alterations


I add a tablespoon or so of dried parsley to the recipe to make a pesto-like sauce and it is great. And sldo add a couple of tablespoons of flour to the oil and then add broth later to make more of this delicious sauce. And it doesn't hurt to add some diced onions when frying either. Thanks for reminding me how yummy this dish is!
