I have always liked mushrooms, especially Portobello. This is one great sandwich. Taken from Cooking Light 1999, 5-ingredient, 15-minute book.

If you want to go the extra mile, you can roast your own peppers either over hot coals or in the broiler oven. And maybe for that special touch, make your own buns. Chefjeb has a good bun recipe and there is another likely bun recipe in here that I haven't tried yet.
