Portobello Sandwiches Recipe

Ingredients

4 large portobello mushrooms, stems removed

1/4c Italian dressing, fat-free, divided

cooking spray

4 (1oz) slices provolone cheese

4 (2 1/2oz) hamburger buns, whole wheat, split

1 (7oz) jar roasted red peppers, drained and quartered

Directions

Brush both sides of mushrooms evenly with 3 tablespoons Italian dressing. Coat grill rack with cooking spray; place on grill over medium hot coals (350 to 400*). Place mushrooms on rack, grill, covered, 4 minutes on each side or until tender. Place cheese over mushrooms, and grill 1 additional minute to melt cheese.

Brush buns with remaining dressing; grill, covered, until lightly toasted. Place mushrooms over bottom of buns; top with roasted pepper pieces and tops of buns.

If you want to go the extra mile, you can roast your own peppers either over hot coals or in the broiler oven. And maybe for that special touch, make your own buns. Chefjeb has a good bun recipe and there is another likely bun recipe in here that I haven't tried yet.

I had a sandwich like this one in a quaint little restaurant here in Michigan called "Sweet Lorraines." I don't know how it was made but this is close to what I tasted. It was so good and very filling. Thanks for sharing.
