Ingredients
  • 1 pkg - 16 ounce (2 1/4 cups) dried lentils, sorted & rinsed
  • 2 cans (14 ounces each) ready to serve vegetable broth
  • 1 pkg (6 ounces) Canadian bacon. You can use ham or regular bacon.
  • 2 medium carrots (1 cup) cut into 1/2 inch pieces
  • 1 medium potato (1cup) peeled and cut into 1/2 inch pieces
  • 1 medium onion (1/2 cup) chopped
  • 1 medium celery stalk (1/2 cup) cut into 1/2 inch pieces
  • 4 cups water
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions
  1. Mix all ingredients into a 3 1/2 - 6 quart slow cooker
  2. Cover and cook on low for 8-9 hours or high for 3 -5 hours.
  3. Stir before serving.
  4. Serve with cornbread. Yum.

This sounds like a wonderful lentil soup recipe! I like lots of 'stuff' in my soup...will definitely save this one. And 'High 5' on the cornbread!!
