If you prefer use beer instead of wine, and try and leave the batter for as long as possible before adding egg white...great after a nice chinese meal...

Caster sugar is a refined sugar, not the same as powder, but that would work just as well...hope this was helpful, not to sure what you guys have over there;-)

Awesome recipe. Thanks for a great 5 forks treat. Just in case anyone else wonders about the caster sugar. Here in Canada & probably in the US too it's called Fine sugar or ex-fine sugar & also Berry sugar. It's just white sugar with very fine granules. It's called caster sugar in England too.
