Saltine Cookies Recipe
I remember making these for Home Economics class. I don't even think high school's have Home Econ. anymore. They are fun though.

Ingredients
  • 4 ounces saltine crackers
  • 1 cup butter
  • 1 cup dark brown sugar
  • 2 cups semi-sweet chocolate chips
  • 3/4 cup chopped pecans, optional

Directions
  1. Preheat oven to 400°.
  2. Line a cookie sheet with a single layer of saltine crackers.
  3. In a saucepan, combine sugar and butter.
  4. Bring to a boil and boil for about 3 minutes.
  5. Remove from heat and pour over saltine crackers.
  6. Spread so it's even on the crackers.
  7. Bake 5-6 minutes.
  8. Remove from the oven and sprinkle with the chocolate chips.
  9. Let sit for 5 minutes.
  10. Spread the melted chips on the crackers and top with chopped pecans.
  11. Cool completely and break into pieces to serve.

I make something very similar except mine has Eagle Brand in it. These are so good and addicting!

I made these using white sugar this past Christmas and they were a big, big hit! The college grandson took the recipe back to school with him. Next time I am going to make them with brown sugar as you have in your recipe....it's got to be even better!


I make these all the time for my family and every time i do they are gone before you know it. i make them using walnuts instead of pecans and sprinkle coconut on top. yum!


I totally remember these, my ex's mom used to make them and I LOVED them.
