Pepper Jack Mashed Potatoes

- 2 1/2 pounds yukon gold potatoes with skins, coarsely chopped shopping list
- 1/2 cup milk shopping list
- 1/4 cup unsalted butter shopping list
- 1 cup shredded pepper Jack cheese shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
How to make it
- Bring a pot of salted water to boiling. Add potatoes, cook for 20 min. or until tender. Drain and return to pot. Add milk and butter to potatoes. Mash potatoes, leaving lumps if desired. Add cheese, salt and pepper, blending well.
