Ingredients

How to make it

  • Skin the possum and remove the head and feet. Be sure to wash it thoroughly.
  • Freeze overnight either outside or in a refrigerator.
  • When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar.
  • At the same time, stew the possum tender in a tightly covered pan with a little water.
  • Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven.
  • Baste often with the drippings.

I love this story!!! Hilarious!!! I have an uncle that loves to catch possum. I remember when we were younger, he was 15 and I was 8 or 9, he actually made a trap to catch one and he killed and asked my to cook it as a stew. It was very delicious. It does have a distinctive taste I guess because it is a scavenger, per se. But my mom used italian dressing or vinegar to rid it of that wild, gamy taste...

lately my neighbors new phrase is 'holly, what did you cook good?'. i was on to her when she asked me after i had a carry out pizza. i thought possibly she smells the fresh picked garlic on the front porch. but no, now she asks all the time no matter what, but i suppose she gets a lot of free meals that way.

This story is to funny. I dated this one guy. Handsome, sweet, intelligent. On our date it was so romantic...All he did was talk about coon hunting. How to hunt, his tactics...he even showed me where he goes. We had our own private fireplace in this unique rustic place...conversation was unbearable. This recipe card idea may not work for him. He may swoop me up!! I might end up cooking all kind of road kill!
