Ingredients

4 cups apples, diced

2 cups sugar

3 cups all purpose flour

1 tsp salt

2 tsp baking soda

1 tsp ground cinnamon

1 tsp ground nutmeg

2 eggs

1 cup vegetable oil ( I use 3/4 cup oil)

1 tsp vanilla extract

1 cup nuts, chopped ( I use pecans)

Directions

Mix together apples and sugar and set aside for 1 hour. Sift together flour, salt, baking soda, cinnamon and nutmeg and set this aside. In a separate bowl beat eggs, add the oil and vanilla extract. Stir this into the apple mixture. Add in dry ingredients and mix well. Blend in nuts. Pour into floured tube pan. Bake at 350º for 1 hour or until toothpick comes out clean. Cool in pan 10 minutes and finish cooling on wire rack.

I've subbed 3/4c the oil with canned mashed pumpkin (not pie mix) then topped it up with the remaining 1/4 cup oil... so moist and flavourful (and excellent way to use up leftover Thanksgiving pumpkin haha!
