Potatoes have been a staple in Polish cuisine for the past 300 years. They are used in many rustic dishes (a nice way to say one pot cooking)as in soups, stews etc. Simple tasty and open to flavorings as you choose.

I absolutely love potato pancakes. =) Simple fare is often the best, IMO. As far as grating, Diva... Food processor! So worth investing in, if you don't have one. Potatoes are grated in 5 minutes flat.

Almost exactly the way my parents used to make them...they never strained the potatoes, probably just added more flour to soak up the moisture. And I've never had them with sour cream...always liked a dusting of sugar on top. I'm glad I saw this recipe. It's been too long since I've had them. I think I'll have to make some tomorrow, vegan style. Oh, and are you crazy? Olive oil is the best for everything, even baking!!
