Placki Kartoflane Or Polish Potato Pancakes Recipe
Potatoes have been a staple in Polish cuisine for the past 300 years. They are used in many rustic dishes (a nice way to say one pot cooking)as in soups, stews etc. Simple tasty and open to flavorings as you choose.

Ingredients
  • 1 1/2 lbs potatoes
  • 1 onion
  • 1 egg
  • salt and pepper to taste
  • 2 tbs flour
  • oil for frying (don;t use EVOO here any oil will do)
  • 1 1/4 cups sour cream

Directions
  1. Peel the potatoes and grate finely
  2. place in a sieve and press with the back of a spoon to remove most of the water
  3. mix in the egg and season well
  4. sprinkle flour onto the mix until it holds a good pancake shape
  5. Pour enough oil in the frying pan to cover the bottom of the pan pretty well
  6. when the oil is very hot drop by the potato mixture by spoonfuls in the pan and press flat with a spatula until thin (hint spray the back of the spatula with cooking spray first)
  7. brown on both sides serve straight from the pan with sour cream
  8. also goes great with sour cream and fried onions and garlic or fried in a good smoky bacon fat (yummy) but I leave it up to your own taste buds.
  9. also to test the seasoning rather than trying the mix raw make yourself a small pancake and try and adjust seasoning before frying all

You are the Man! I grew up on this. My kids just love it. IT was always knuckle would get sore grating, hate the grating part.....but oh so worth it.


Oh I like it with apple sauce too! So I get to eat double!


I absolutely love potato pancakes. =) Simple fare is often the best, IMO. As far as grating, Diva... Food processor! So worth investing in, if you don't have one. Potatoes are grated in 5 minutes flat.


Don't use EVOO? OH NO! What would Rachel say?? LOL!


Almost exactly the way my parents used to make them...they never strained the potatoes, probably just added more flour to soak up the moisture. And I've never had them with sour cream...always liked a dusting of sugar on top. I'm glad I saw this recipe. It's been too long since I've had them. I think I'll have to make some tomorrow, vegan style. Oh, and are you crazy? Olive oil is the best for everything, even baking!!
