I use extra garlic as well, lol. Its a bit much for some but not around my house, we love it. Let me know how this works out for you!

This dish is excellent, my family loved it! i added the extra garlic and it was great. Instead of the red and green peppers, i used yellow and orange and it was great. thank you!

Tammy, I add extra garlic too, we LOVE garlic and spices around here. So glad you enjoyed it! I'll have to try the sweeter peppers next time, thanks for the tip.

The sauce is FANTASTIC. It's super-flavorful without being in your face. (Incidentally, I used 4 cloves of garlic, and might even go for more next time.)
But I'm not liking chicken thighs with it, though it's usually my favorite cut of meat. 1 1/2-2 lbs crowded my skillet too much, and made it hard to distribute the ingredients. They didn't really pick up the flavor, either.
Still, the sauce is so friggin' good I'll definitely be trying it again with other meats - kosher or brined chicken thighs, rabbit stewed in the sauce for a long time, or just the sauce alone served over pan-fried chicken cutlets... (Actually, the last one's a good idea for the leftover sauce!)

Made it last night with boneless, skinless chicken thighs, extra garlic and served over noodles. Delicious! There wasn't any left in the pan afterwards! Kids loved it too! Thanks. A definite 5!

That turned out pretty good, I used Chicken Marylands with the skin on. It turned out fantastic :) Couldn't get my hands on a Red Capsicum though.
